3-minute Superfood Dinner

Personally I think more things in life should be quick and easy… well some things, dinner being one of them. Spending an hour creating a healthy meal from scratch is probably the last thing you want to do after a long day mid week. When I’m in a rush or just can’t be bothered cooking dinner I have a Japanese inspired go-to meal. It only takes 3 minutes to make and is packed full with antioxidants, vitamins and minerals including iron, calcium, selenium, zinc and chromium. For a spicy touch try adding cayenne pepper and/or dried chilli.

3-minute Mushroom and Seaweed Kelp Noodles (serves 2)

  • 500g kelp noodles
  • 2 cups boiling water
  • ¼ cup dried porcini mushrooms
  • 3 sheets nori dried seaweed (cut into strips)
  • 2T organic soy sauce
  • 2T C coconut water
  • 2T fish flakes
  • 2t garlic flakes
  • Pinch of dried chilli or chilli jam (optional)
  • Coriander to garnish

Directions:
Pre soak the porcini mushrooms in hot water for 10 minutes. Place kelp noodles into a large bowl. Pour boiling water over the kelp noodles. Leave for 2 minutes. Add nori, mushrooms, coconut water and soy sauce. Garnish with garlic flakes, fish flakes, chilli and coriander. Serve.
